I recently opened a demo account, chose 1:100 leverage and "deposited" $5,000 into it. When I logged in the account, I saw 50,000 in available funds, and since then I was able to bring the balance to about 68,000. So, my question is: if it was a real live account, how much would I be able to withdraw? Is is $18,000 profit that I realized?

You were using the ECN demo which has a fixed $50,000 demo so yes, you made $18,000 on the demo account

Yes, if You want your balance in live account to be the same as in your demo account , You have to deposit $50000. Minimum deposit for ECN account is $1000.

you can make as much profit as you can because it is the type of business where you can make huge profits with very small investments.

It's the ECN demo you used. More profit can be make. Your profit will always depend on your deposit and the leverage nd volume you've used but it is always advisable to check your volume 'cos it determines hw much gain or loss u've made.

i think is not always our result the same on the future , now maybe we get god profit , but some day maybe will meet with losses, maintain consistently profit is very hard to do for my experience.
